BrowniesAgain another favourite with all espically customers at the Farmers Market.
Filling:
1 and 1/2 cups of softened butter
2 cups of white sugar
2 well beaten eggs
2 cups of white flour
3/4 cup cocoa
1 teaspoon vanilla
1 cup of milk
1 cup semi sweet chocolate chips (optional)
Cream butter with sugar and mix in the remaining ingredients. Pour into a well greased 9 X 13 pan and bake at 325F for 38 to 40 minutes. Cool
Icing:
1/2 cup of butter
1/4 cup of milk
1/4 cup of cocoa
3 cups of icing sugar
1 teaspoon vanilla
Melt butter in saucepan and add milk and cocoa. Mix well. Add icing sugar 1 cup at a time and mix well. I find a whisk works great for this. When well mixed remove from heat, add vanilla and pour over brownies. Completely cool in refrigerator before cutting.
When I sell these at the Farmers Market I do variations of this. The best sellers are Baileys Irish Cream and Kahula Brownies. For the filling I add 1/2 cup of the liquor with 1/2 cup of milk and for the icing I substitute the liquor for the milk. Very yummy, very decadent (1 pound of butter in a ( 9 X 13 pan) and freeze very well. Again make sure the brownies are completely cool ( best done in the refrigerator) before attempting to remove them from the pan. Enjoy.
