    Safari Supper

    I love casseroles. They are a great way to feed a crowd, minimize the time spent in the kitchen and also very economical. This is an interesting recipe, rather different but again in the top 5 best sellers at the farmers market.
     
    1 and 1/2 lbs of lean ground beef
    1 medium size onion diced
    1 cup white rice, uncooked
    2 teaspoons chicken stock
    1/2 teaspoon salt
    1/4 teaspoon cinnamon
    3 tablespoons chunky peanut butter
    3 cups hot water
    2 teaspoons curry powder or paste
    1/4 teaspoon ginger
    1/2 cup of raisins
    1 tablespoon honey
     
    Cook and stir the meat and onion until the onion is tender and the meat is brown. Drain off excess fat.
     
    Mix remaining ingredients in a large bowl and add the ground beef mixture.
     
    Turn the mixture into a ungreased 2 quart casserole dish. Cover and bake at 350F, stirring occasionally until rice is tender, about 50 to 60 minutes. Yields 4 cups.
     
    I usually double the recipe as it is good for leftovers and freezes well. When adding the seasonings I am generous in the amounts added. I use the Madras Hot Curry Paste as we like our dishes rather spicy but that is a personal choice. Add a tossed salad and fresh bread and dinner is served.
